"Macaroni & Ouch"

One of our children’s most favorite things to have for dinner is "Macaroni and Ouch". It is really Macaroni and Cheese, but one evening when my wife was draining the noodles while answering the question about what we were having for dinner it came out "Macaroni and Ouch". I believe that is the name that our children and probably our children’s children will call it from now on.

I, being the creative Father that I am and being motivated by the plainness of normal macaroni and cheese, have come up with some variations on the theme that have gone over well with our kids. Here are some of them:

  • There is the "Beefed Up" version which consists of the basics plus browned hamburger.
  • Then there is the "Franked" version, where I slice all beef franks, preferably kosher, and boil them with the noodles. This helps to flavor the noodles.
  • The ever favorite "Taco" version is always a hit. It is like the beefed up version only you add taco seasoning to the ground beef.

Other "enhancements" I am known for include the "Extra Cheese" treatment, where I add grated cheddar or Colby cheese as I am stirring the cheese packet in. A taco cheese mixture is appropriate for the taco version. When you don’t want to fight with your kids about eating their peas, just stir a can or a bag of warmed up frozen peas in and presto, vegetable fortified nutrition. As usual the kids love to help, whether it’s watching the pot boil, gathering the ingredients or stirring it all together in the end. So liven up your boring Mac & Cheese some night and see if anyone notices!
