Cooking with Kids

by Bernadine Cook

We have fun cooking with our kids and enjoy recipes where it is possible for your children to actually "help". This doesn't involve the stove so it is a great recipe to involve your kids with. You will love this one, but so will your hips. It is South African and is delicious.

Fridge Tart

8 eggs separated, you need the yolks
4 cups of milk
1 cup of sugar
1/2 cup cornstarch
2 teaspoons vanilla
2 cans sweetened condensed milk

Juice from 3 lemons, microwave them till warm and you get more juice from them.

Marie-lu cookies, or vanilla wafers, bland cookies, enough to make to layers in a 10 x 13 pan.

Make the custard by putting the milk onto boil, when it does so add half of it to the cornstarch, sugar and egg-yolk mixture, beat well and pour back in the saucepan with the rest of the milk, bring to the boil till very well thickened, like cool whip, watch that it doesn't burn. Remove from heat and beat in vanilla. Let cool while you do the rest.

Line the bottom of the 10 x 13 pan with a layer of cookies, spoon a layer of custard, half of it, over the cookies and it will form a slight skin as it cools, this is good because it makes spreading the condensed milk mixture easier. The condensed milk mixture, is the 2 cans of sweetened condensed milk and the lemon juice mixed well. Spread half of this over the custard and then layer the cookies, custard and condensed milk again.

Refrigerate and serve cold.
